Step-by-Step:

  1. Sorting & Washing: Select ripe, red tomatoes and clean thoroughly.
  2. Blanching: Steam briefly to loosen skin and soften fruit.
  3. Pulp Extraction: Use pulper to separate skin and seeds.
  4. Cooking: Cook pulp with sugar, salt, spices, and vinegar in a steam kettle.
  5. Thickening: Add starch to get desired sauce consistency.
  6. Homogenization: Blend for a smooth texture.
  7. Pasteurization: Heat to kill bacteria and extend shelf life.
  8. Filling: Hot-fill into bottles, jars, or sachets.
  9. Cooling: Gradually cool filled containers.
